My two favourite things, cake and chocolate! This also happens to be one of my Son’s favourite things too!

I love baking surprise cakes, especially birthday cakes. Now my Son does not have any food allergies at all, and can eat almost any dish presented to him, within reason. However, as my daughter has an egg and nut allergy, I really wanted to bake a cake that we could all enjoy together so that she would not feel left out.  I used Mrs O’s Egg Free Yummy Vanilla Cake Mix to bake the sponge cake. The cake batter was just so delicious… Then, I used store cupboard ingredients, Icing Sugar and non-dairy butter to make a simple fluffy frosting to sandwich and frost the cake.

Then came the fun part! I placed a good selection of non –dairy chocolates on top of the cake as an extra treat. Delicious!
